Chocolate is typically paired with rum, but not everyone knows that cocoa-based products go excellently with lots of other drinks including a glass of good wine!
Follow these three simple steps and you can't go wrong:
• Start off with good chocolate; it can be milk chocolate, white or dark, the important thing is to maintain high standards;
• Choose your wine based on the percentage of cocoa: the higher the percentage of cocoa the richer the wine should be in alcohol, structure and aromatic intensity, but make sure to keep a careful eye on the right balance between bitter, sweet and acidic elements;
• The wine should always be sweeter than the chocolate, if not, it will taste sour. For instance, match white chocolate with a Moscato, milk chocolate with a Pinot Gris and dark chocolate with more full-bodied wines such as Pinot Noir.
